Tajin Jicama Shrimp Tacos

INGREDIENTS:

  • Jicama shells
  • ½ lb- Shrimp, peeled and deveined – SGC# 209061
  • 2 tablespoons olive oil – SGC# 054417
  • 1 tablespoon garlic, minced – SGC# 192922
  • 1 tablespoon  Restaurant Marketplace chili powder – SGC# 169920
  • 1 tablespoon Restaurant Marketplace cumin – SGC# 171561
  • 1 tablespoon Restaurant Marketplace smoked paprika – SGC# 191331
  • ½ teaspoon salt and pepper – SGC# 052100; 191565
  • 1 tablespoon Tajin – SGC# 623523
  • 1 -Lime juiced – SGC# 192625
  • 1 cup-Red cabbage, thinly sliced – SGC# 191245
  • Avocado, sliced – SGC# 192607
  • Fresh cilantro, chopped – SGC# 193202
  • Sour cream (optional) – SGC# 193046

INSTRUCTIONS:

  • Marinate shrimp in olive oil, minced garlic, chili powder, cumin, paprika, salt, pepper, tajin, and lime juice for at least 15 minutes.
  • In a skillet, cook the marinated shrimp until opaque and cooked through.
  • Peel jicama and cut into thin, pliable slices to use as taco shells.
  • Assemble tacos by placing shrimp in jicama slices, and top with red cabbage, avocado slices, cilantro and top with Tajin.
  • Drizzle with additional lime juice and, if desired, add a dollop of Greek yogurt or sour cream.
